Yummy LCHF

I tried making some focaccia bread and it actually turned out okay. I even made some of it into a pizza tonight.


For 2 loaves (two smaller pans)
3/4 cottage cheese (4%)
6 eggs
40 g of melted butter
1/2 cups almonds (shelled, if you want a "white" bread)
1/4 cup sunflower seeds
1/4 cup sesame seeds
2 tablespoons of psyllium husk
1 teaspoon salt
2 teaspoons baking powder



Preheat oven to 170 degrees/ 340 Fahrenheit. Blend cottage cheese free of lumps along with the eggs and pour the liquid butter in it. Grind nuts and grains into flour in the food processor and add psyllium husk, salt and baking powder. Stir the mixture well with the cottage cheese mix.
Divide the dough into two parts. Put the dough into two smaller pans lined with baking paper and pre-bake them for approx. 15 minutes. Take them out of the oven. Garnish loaves with either press olive / sun-dried tomatoes lightly into the dough and sprinkle with rosemary and salt flakes. Bake them in the oven for another 15-20 minutes.
